3. YOUR RECIPE: Lydia’s amazing nourishing, mineral rich Caldo de Pollo Soup for Postpartum Healing gave us life. We love it when food is medicine. In the 4th trimester, warm, easily digestible, hydrating and mineral rich foods are gentle and soothing and essential for your body.
The vegetables commonly used in caldo de pollo, like carrots, celery, choyote, and potatoes, offer important vitamins and minerals, including vitamin A, vitamin C, and potassium. The broth itself is a hydrating elixir, rich in electrolytes like sodium and magnesium, which can help replenish the body.

INGREDIENTS: 2 1/2 lbs chicken drumsticks or a whole quartered chicken, 3 1/2 to 3 3/4 quarts water 2 dried bay leaves 1 small onion 6 to 7 cloves garlic small head of cabbage (chopped) 2 medium potatoes (chopped in large chunks) 1 large Mexican squash (chopped in large chunks) 1 chayote squash 2 medium carrots 1 celery stick 2 green onions bunch of fresh cilantro (I used parsley) 1/3 cup diced tomatoes/tomato puree (or tomato sauce) 1 Tbsp chicken bouillon powder salt and pepper to taste
Instructions:
In a large pot, add chicken, onion, and garlic. Cover with water and bring to a boil.
Reduce heat to simmer and skim any foam from the surface.
Add carrots and potatoes. Cook for 15 minutes.
Layer in shaved cabbage, chayote squash and tomatoes based on cooking time and prefered softness.
Add zucchini, corn, and seasonings. Simmer until vegetables are tender.
Garnish with fresh cilantro and serve with lime wedges.
Caldo de Pollo Soup: For Postpartum Healing in Mexican culture, the first 40 days after giving birth are referred to as the “cuarentena,” a period in which the mother is simply supposed to rest and feed and enjoy her new baby. It's understood that 40 days is an essential time for the mother’s reproductive organs to heal and regain their shape after giving birth.
